The Perfect Rib Eye Sandwich

Chef Marco Ascone, known for his passion for enhancing traditional flavours with a touch of innovation, shares his recipe for a hearty yet sophisticated rib eye sandwich. This recipe combines high-quality ingredients with simple techniques to create a dish that’s as delicious as it is satisfying.

Ingredients (Serves 2)
  • 250g Country Style/Sourdough Bread 
  • 1 Garlic Clove 
  • Good Olive Oil
  • 300g Organic Rib Eye or Sirloin Beef Steak
  • 60g Emmentaler Cheese 
  • Rucola Salad or Micro Greens (Handful) 
  • 1 Fresh Lemon (Juice and Zest) 
  • Salt Flakes
  • Freshly Ground Szechuan Pepper
  • Paprika

  • Cast iron griddle pan or charcoal grill 
  • Chopping board
  • High-quality knife 
  • Spatula or grill tongs
  • Glass bowl

Preparation Steps
  • Step 1: Marinade the Steak
    Coat the steak with paprika and olive oil. Let it marinate for 1 hour in a vacuum-sealed bag. Important: Do not refrigerate the steak during
    this time.
  • Step 2: Heat Your Grill or Pan
    Preheat your griddle pan or charcoal grill
    to 180-200°C.
  • Step 3: Prep the Garlic and Slice the Cheese
    Peel the garlic clove, setting it aside for later.
    Cut the cheese into 4 slices.
  • Step 4: Dress the Greens
    In a bowl, toss the rucola or micro greens with:
    • Juice and zest of a fresh lemon.
    • Olive oil.
    • Salt flakes and freshly ground pepper.

  • Step 5: Prep the Bread and Add Garlic Flavor
    Cut 4 slices of bread and drizzle with olive oil. Toast the bread slices on the pan until they’re crispy and golden. Cut the garlic clove in half and using the cut sides, rub the garlic over the warm, toasted bread.
  • Step 6: Cook the Steak
    After marinating, sear the steak on the preheated pan or grill for 1.5 minutes on each side. Allow the steak to sit for 2 minutes before slicing the steak into thin strips (0.5 cm thick).
  • Step 7: Assemble the Sandwich and Final Toast
    Layer the toasted bread with the slices of steak, cheese and dressed greens. Place the assembled sandwich on the grill or pan for 1.5 minutes per side until the cheese melts slightly.
  • Step 8: Serve and Enjoy
    Slice the sandwich into three portions. Pair it with your favourite cold beer, Champagne, Cava, or Franciacorta for an indulgent experience.
